Happy Friday everyone. I can’t believe the weekend is finally here. Day off means I get to enjoy it with my boys and being lazy.  Currently I’m.. Loving: Pinterest. I have been on it this whole week just pinning away ideas to do for this spring/summer. I’m just so over the winter and ready for warm weather. Are you? Writing: I have been trying to get back into writing in my journal. I feel like it’s a great way to release anything inside your head.  Planning: As of right now we are planning to take the kiddos to Chicago next weekend for a little fun in the big city. We are also planning a trip to Mall of America in Minnesota and a trip to New York City to visit my family. Lots to do this year. But trying to do everything on a budget is quite hard lol  Reading: Gone Girl. I just started last week and I definitely like it. I can’t wait to finish reading the book.  Needing: Money to be able to do what I want to my apartment but of course that takes time and patience. ERRRRR!!!! Fish Tacos

One of my favorite go to meals when I have to make something super quick is “Fish Tacos”. Now I’m not talking about the frozen fish you buy at the store but actual fish you buy fresh and get from the store, season it and cook it. This is by far my favorite recipe because my mom taught me how to do it. Family recipe I must say. Growing up fish was a must every Friday since we didn’t get to eat meat. We were catholic and so my parents would always make Fish for dinner. I have made this fish with white rice and its so delicious. I have also shared this recipe with my close friends. They loved it. I decided to make this Fish recipe into a fish taco recipe. I seriously hope you enjoy it as much as we do.

Happy Tuesday. I haven’t blogged in a while. I didn’t have internet for a while since I was trying to find a different provider and I ended up staying with the same provider. Lol silly me. Things have been amazing so far. I’m loving life and everything. Lately though I have been loosing my inspiration to write post and I think that now I’m back at it I will continue to post. Breakfast Muffins

  Ingredients: 10 eggs scrambles (I added milk to make it fluffy) Salt & Pepper Tater Tots 3 Bacon Strips 4 Sausage Links Shredded Cheese Directions: 1. Preheat oven at 415 degrees. While the oven is preheating cook the bacon & sausage. 2. Place tater tots on a baking sheet and bake for about 10-12 mins 3. Scramble eggs, add milk and cheese, salt and pepper. 4. Once the bacon and sausage are cooked, place them on a paper towel to cool off. Once they’re cool, chop up the bacon and sausage into little bites. 5. Remove the tater tots from the oven, on a cupcake baking pan spray non-stick cooking spray, place a few tater tots, add the bacon and sausage, and pour the egg mixture over it. (Don’t over fill). 6. Bake for about 15-20 mins or until cooked all the way. 7. Remove from oven and ENJOY!!!! Made these for my boys, sis and her boyfriend and they loved it. I think my sisters boyfriend was in heaven considering how giddy he was about them. Lol

S’mores Pie

  Who loves S’mores? I know I do! I decided to try out doing a S’more Pie and this was easy and fun to do. It was delicious, rich and perfect for the holidays. I was beyond excited to have my best friend try it. Let me just say she was extremely HAPPY! Lol
