Who here loves a good fall recipe? Personally, for me, I love to make them for my family. I have never been a huge fan of pumpkin flavored anything. With it being the season of baking, I wanted to create a recipe that was fall flavored but also healthy. I mean you can’t celebrate fall without pumpkin lol.
My fiance right now is in the midst of doing a weight loss challenge with his coworkers. Whoever loses the most weight wins a certain amount of cash. How awesome right. Because he’s been working out and trying to lose weight, I created a recipe for him that was healthy and of course, his favorite fall flavored PUMPKIN SPICE. You thought I was basic? No, my fiance is! Sorry babe.
Healthy Pumpkin Spice Muffins
- 1 cup pumpkin puree
- 1 cup old fashion rolled oats
- 1 cup plain greek yogurt
- 1/2 tsp ground cinnamon
- 1 1/2 tsp pumpkin pie spice
- 2 eggs
- 1/2 tsp baking soda
- 1 tsp baking powder
- 2 scoops vital proteins marine collagen peptides
- 1/2 cup dark chocolate chips
Preheat oven to 350 degrees.
Add the old fashion rolled oats into a blender to grate them into a powder substance.
In a bowl, add the grated rolled oats, pumpkin puree, plain greek yogurt, baking powder, baking soda, eggs, pumpkin pie spice, cinnamon, and vital proteins collagen peptides and mix together.
Fold in the dark chocolate chips.
Line the baking pan with muffin liner and pour 1/4 cup into each liner. (I used a cupcake pan).
Add extra dark chocolate chips on top of the muffins.
Bake for 20 minutes. Use a toothpick to make sure they're baked completely.
Let it cool down and enjoy.

Most of the Pumpkin Spice Muffins, I recipes contain flour, butter, and milk. So I wanted to substitute these ingredients for a healthier version.
