I have been really getting into finding ways to improve my skin, hair, and nails. I use to be a nail-biter. YUCK, I know. But up until 4 years ago I actually stopped that terrible habit. I love seeing my nails long but at times I’ve noticed they were so brittle, thin and not strong at all. Which sucks because then they’re constantly breaking. I have been trying to find ways to intake nutrients that are going to help not only with my nails but also with my hair and skin.

Who here loves having a smoothie bowl? This is my first time making a smoothie bowl and actually eating one. I can honestly say this is a new favorite for breakfast. I’ve always wanted to eat one but never made one because I figured I would just pour it into a cup and just drink it. But adding chunks of fruit, chia seeds and almonds, just makes it better.

I’m back with another recipe. This time is all about these protein pancakes. They may not look appetizing at all but according to my fiancé, they are DELICIOUS. Since he’s been working out I’ve been trying to find ways to incorporate proteins especially collagen into his meals besides smoothies. Don’t get me wrong, he loves smoothies but you gotta switch things up every now and then.

Quick & Easy French Toast

I’m always trying to find simple and easy ways to make breakfast in the morning. Especially for the boys. Mornings are always busy during the week. Sometimes the boys will ask for French Toast.

Here’s a quick and easy French Toast recipe.

Ingredients
  • 1 cup of milk
  • 2 eggs
  • 1 tsp of vanilla extract
  • 6 slices of Texas toast.
Instructions
  1. 1. In a bowl mix together the ingredients.
  2. 2. Stove should be set on medium low. Once it's warm, melt some butter on the skillet.
  3. 3. Dip a slice of the Texas toast in the batter, make sure each side completely covered.
  4. 4. Place it in the skillet, cook until both sides are lightly golden brown
  5. 5. Serve with your favorite side dish.

Breakfast is a huge deal in our house. I wanted to make something that we would be convenient and great to reheat for those busy mornings. So I made these for my boys and they loved it. You can easily make them ahead, freeze them and reheat in the microwave when you’re hungry.

Ingredients
  • 10 eggs
  • 1 bag tater tots
  • 4 bacon strips
  • 4 sausage links
  • 1 1/5 cup shredded cheese of your choice
  • salt
  • pepper
Instructions
  1. Preheat oven to 415 degrees. While the oven is preheating cook the bacon & sausage.

  2. Place tater tots on a baking sheet and bake for about 10-12 mins

  3. Scramble eggs, add milk and cheese, salt and pepper.

  4. Once the bacon and sausage are cooked, place them on a paper towel to cool off. Once they’re cool, chop up the bacon and sausage into little bites.

  5. Remove the tater tots from the oven, on a cupcake baking pan spray non-stick cooking spray, place a few tater tots, add the bacon and sausage, and pour the egg mixture over it. (Don’t overfill).

  6. Bake for about 15-20 mins or until cooked all the way.
